
Crock Pot Gumbo
Ingredients:

1/3 Cup of All-Purpose Flour

1/3 Cup of Chopped Peppers

1 ½ Cups of Chopped Onions

1 ½ Cups of Chopped Peppers

1 Cup of Chopped Celery
-
1 Cup of Frozen cut okra

2 Teaspoons of Bottle minced garlic (or fresh garlic)

1 Teaspoon of Dried Thyme
-
¼ Teaspoon of Ground red pepper

3 Cups of Chopped roasted skinless chicken
-
1 lb of Andouille sausage, cut into 1 inch pieces
-
4 Cups of Chicken broth
-
1 Can of Diced tomatoes with green chills (14 oz)

½ Tablespoon of Emeril’s Essence
Directions:
To make to Roux: turn crock pot on low to heat up while you are doing this step In a small sauce pan combine flour and oil, mix well with a whisk. Cook stirring constantly over medium-high heat for 3-4 minutes. Reduce heat to medium, cook stirring constantly about 10 minutes or until mixture turns reddish brown.
To make Gumbo:
Place flour and oil mixture in 5 quart crock pot that has been sprayed with Pam. Add all ingredients, stirring to mix. Cover and cook on low 8 hours. Serve Gumbo over rice if desired.
