Chicken Orzo Pasta

This is one of my favorite recipes to make a lot of and then keep and eat throughout the week. 

 

Ingredients:

·         1 Zucchini, sliced into quarters

·         4 oz of White button mushrooms

·         1/2 Onion, chopped

·         1 Chicken breast

·         1.5 Cups of orzo pasta

·         2 Cups of chicken broth

·         7 oz Can of diced tomatoes

·         1 Tablespoon of Olive oil

 

Preparation:

Pre-cook the chicken breast and slice it into bite size pieces. Slice the zucchini, mushrooms and onion and set aside.

 

Cooking:

In a large pot heat olive oil over a medium to high heat. One the olive oil is heated, add the onions and zucchini. Let this cook for 4 minutes. Stir to prevent from sticking. 

Next add the chicken and mushrooms. Cook these for 2 minutes or until the mushrooms and reduced their size.

Next add the orzo pasta and then chicken broth. Let the broth come to a boil and then turn the heat to low and let for 10 minutes. 

Finally stir in the tomatoes and enjoy!
